Caramel Sauce! Dulce du Leche is a fancy name for caramel sauce, i found this kinda quick and very easy recipe on my favorite Chef's webpage: Chef Michael Smith, he is somewhat local to me, and therefore uses ingredients that i have access to. I have stolen recipes from him before, and they always turn out!
This recipe starts out with two ingredients: a can of sweetened condensed milk, and a big pot of boiling water. I use store brand because i am cheap!
I ripped off the label to save a mess, and dropped it into a pot of water. The pot of water has to boil for three hours (which is why i said above, kinda quick). The can has to be completely submerged for the entire boiling time.
I had to borrow this pot from my Mom, because none of mine were tall enough. This one was very close to not being tall enough as well, I had to add water every 20 minutes or so as it boiled off. I boiled it in the kettle first, so the water would not cool down and have to be reheated. After three hours, i discovered one of the few things i do not have in my kitchen are tongs, so i carefully drained the pot and fished the can out with an oven mitt.
Shiny hot can. I had to let it sit for two hours to cool. When i was able to put my hands on the can and hold them there, i figured it was safe to open it! This is what i found...
All i could say was 'Wow'. Honestly, i was surprised it worked...i took a pinky fingerful...very sweet and yummmmmm. The next time i make it (when i get a bigger pot) i think i will cut down the boiling time a bit. The bottom was a bit burnt, as you can see below.
I plan on using this to top some ice cream if i have company for dinner this weekend. I usually do have company at least one meal during the weekend, so it is a safe bet that it will not get wasted!
