Smartie Cookies

It's been awhile...i am on a diet. I vow to lose weight before donning a bridesmaids dress next spring, so i am not doing so much baking. Also, my camera died, now i have a new one, so you have entertaining pictures to go with my rambles!

It's a rainy day and i am not working, i had a dentist's appointment mid day so i took the whole day off. So what to do after my appointment to waste the rainy afternoon? Bake! Actually, i do have a reason to bake today. A friend's birthday was recently, and he LOVES lemon bread, so i made him one.

Check out my first ever post, back in April, to see how to make it. One of my Mom's old recipes.

I was actually going to make 2 lemon breads, but i ran out of butter and really did not feel like running to the store. Meanwhile, i am eyeballing 2 boxes of Smarties candies, left over from my last 2 trips to the movie theater. I usually get the special of popcorn, pop (or water) and a chocolate bar. So why not make cookies out of them? I did an internet search to see if there is a special recipe, but it appears everyone just uses their favorite chocolate chip recipe and substitutes the Smarties for the chips.

I poured the candies into a measuring cup and found out there is not quite half a cup. My recipe calls for a full cup, so i filled the rest with some left over white chocolate rainbow chips (see Friendship cookies). The batter looks very colorful!

1 cup Brown sugar
1/2 cup butter or margarine (or shortening)
1 egg
5 Tbsp milk
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
1 cup chocolate chips
2 cups flour.

Cream together sugar and butter. Add egg, mix well. Add milk and vanilla. Mix together flour, salt and soda. Add to liquid mixture. Add chocolate chips, mix well.
Drop onto pan, bake at 325 F for about 20 minutes.

Usually they do not take quite that long to bake, so keep an eye on them. There is no yield on th recipe, but i got 30 this time. That is about typical.

Colorful cookies, cooling on my brand new cooling rack. I got three that stack for 11 dollars, and i love them! My diet says i must try one, even though my dentist may not agree! Every diet needs a bit of a treat now and then. If you do not allow a bit of indulgence, you might explode!!

Now i just have to find someone to give most of these to!! :-)

Happy Baking!
