Chocolate Oatmeal Muffins

It seems i am on a roll, five recipes in five days. I really only have two muffin recipes, so i wanted to add at least one more to my list. I searched the Food Network Canada website and found this one. They had no source listed for the recipe, so i am not sure which host it came from. There were no pictures, either, all i had to go by was the list of ingredients and they sounded delicious! The recipe states it makes 12 muffins.

Chocolate Oatmeal Muffins. 


1+1/4 cup flour.
1 cup sugar.
3/4 cup quick oats.
1/3 cup cocoa.
1 Tbsp baking powder.
3/4 tsp sale.
2 eggs.
1 cup milk.
1/2 cup cooking oil.

In large bowl, combine flour, sugar, oats, cocoa, salt and powder. In another bowl, combine eggs, milk and oil. Pour wet ingredients into dry and stir until just moistened.
Pour batter into prepared muffin tins. If desired, sprinkle each muffin with a few quick oats; bake for 15 to 20 minutes at 400 F.


I got a dozen medium muffins and six muffin tops. I could easily have filled the regular muffin tins more, but most recipes state to fill them 3/4 full, and so i did. The next time, i will remember to fill them more so they rise and make big muffins.

The muffin tops had bottoms that were slightly black after only ten minutes; it's a good thing that i went to rotate the pans when i did or else they would have been charcoal. If you look close at the above picture, you can see the black edges. The regular ones only took five more minutes, and their bottoms are slightly dark to. I think next time i might have to lower the temperature of the oven.


Although the muffins are good, it still seems to lack something. I am not sure what, though. Maybe some nuts or chocolate chips? But then they might be more like cupcakes than muffins.


This recipe is not quite ready to go be posted on my new bakery page, i think it needs a bit more work. It has a lot of potential, though.  I am planning on taking some in to my co-workers this afternoon and let them give their thoughts on what should be added.


I don't mind working the evening shift, this week i am in 3pm until 11pm. I like working it because i can get so much done in the mornings, like make muffins! Also this morning, i went and got my eyes checked; it has only been a year and a half, but i need new glasses already. They will have to wait a couple weeks, until the next paycheque. Also, i finally broke down and signed up for twitter. I signed up as mysweethomebake (there was not enough line space for 'baking'), to match my new at home bakery.
