Two months ago, when all the calendars were 50 to 75 percent off, i found one called 'Fix it and Forget it'. YIKES! A Crock-Pot Calendar! I grabbed it at 50%, even though i knew it would drop further in price the next week. There were only 4 copies and i did not want to miss out! So finally, two (close to three) months later, i finally got to one of the recipes. The last couple of months i have been making two piles. One for make it, one for maybe not. Why i am not tossing those ones into the bin beside my desk, i don't know; but there sit the maybe nots. This recipe came up for March 30th, and it went into the NOW pile. I had all the ingredients but one, so i got that one yesterday and whipped it up today.
Cheesy Slow Cooker Pizza.
1+1/2 Lbs ground beef or bulk Italian sausage.
1 medium onion, chopped.
1 green pepper, chopped.
half a box of rigatoni, cooked.
7 oz jar sliced mushrooms, drained.
3 oz sliced pepperoni.
16 oz jar pizza sauce.
10 oz mozzarella cheese, shredded.
10 oz cheddar cheese, shredded.
Brown ground beef and onions in saucepan; drain.
Layer half of the ingredients into crock-pot in the following order: ground beef, green pepper, noodles, mushrooms, pepperoni, pizza sauce, cheddar cheese, mozzarella cheese. Repeat layers.
Cover; Cook on low 3 to 4 hours.
This has officially gone into the Favorites pile. Two bites in, i was told i had to make it again. I states that it serves 6 to 8, i got four hearty servings, but i used only a pound of burger, I served it with garlic bread. This is a super cheesy meal. Along with the mozza-cheddar, i added a good half cup of Parmesan.
I skipped the mushrooms because i do not like them fresh, let alone canned (or jarred). I find canned mushrooms like little pieces of rubber. The addition of the pepperoni really gave it a good kick, it is one of my favorite pizza toppings. Wondering what 3 ounces of pepperoni looks like?
After weighing, i cut them into quarters. And i still have more for something else, but i may just throw it in the freezer.
This is a hearty meal, it took a bit of prep, but it turned out great! Can't wait to make it again!
That's funny... I just found a calendar that I bought back in November for 2011 while I was cleaning the top of my fridge! I love slow cooker recipes... such comfort food and so easy! I'm doing those cake pops tonight... hope they turn out okay!
