Chicken Schnitzel & Crispy 'fried' veggies.

To say it rained yesterday is like saying Niagara is a small waterfall. The rain came down in buckets, i was drenched half a minute from work, and still had to walk another nine and a half. Of course i had no umbrella, but with the wind, it would not have mattered. I got home, stripped my jacket into the bathtub, changed into my PJs and curled up to listen to the rain. Since it was only 3 PM, i had to try and keep myself awake till dinner.

I searched Kraft and decided to dry two new recipes. They both looked really good and had a lot of reviews stating the same.


Crispy Chicken Schnitzel 




1 envelope extra crispy Shake & Bake.
1/3 cup grated Parmesan.
1/4 cup miracle whip.
2 Tbsp milk.
4 boneless skinless chicken breasts. 

Combine Shake & Bake and cheese. 
Combine milk and Miracle Whip.
Dip in milk mixture then into Shake & Bake, coating well. throw out unused coating mix. 
Bake at 400 F for about 20 minutes. Serve with red potatoes. 


Crispy 'Fried' veggies



1 egg, lightly beaten.
1 sweet potato, cut into 1/4 inch pieces.
1 cup each broccoli and cauliflower florets.
1 envelope Shake & Bake extra crispy.
Ranch dressing, to serve.

Beat egg in small bowl.
Dip veggies in egg, then in coating mix.
Bake 20 minutes at 425 F.
Serves 6; 5 pieces each.




I used a few different veggies. Sweet potatoes, zucchini, broccoli, carrots and mushrooms. Mmm, yummy. The potatoes and carrots turned out good, the zucchini shriveled up to almost nothing, especially after sitting on the counter for a minute after cooking. The broccoli and mushrooms were burnt a bit. I only used the egg to coat the broccoli, carrots and mushrooms; for the potato and zucchini i used water. I cooked it all at the same temperature, 400.  I am glad i did not out the veggies in at 425, they might have burned worse. All in all, it was pretty good. Here are a couple pictures of the cooked veggies.



The chicken was a whole other story. It was messy making it, but it turned out moist and delicious! I think i will be making the chicken again...and again...yummy! I never thought of using Miracle Whip in baking before;  i use it instead of mayo, and who would have thought to put mayo in the oven?? Well, it makes the chicken very good!


I don't think i will make the veggies again, unless i stick to the sweet potato and carrots, and a lower oven. The chicken is going into the re-make file, i can't wait for that one!
