Bumbleberry Crumble.

It is quite cool today, so cool, i considered turning the heat back on. Instead, i decided to throw something into the oven. I had a bag of mixed berries in the freezer, a bumble berry mix: Blackberries, blueberries, raspberries and strawberries. Yummy! I found this recipe for 'any fruit' crumble in a Basic Baking book, it sounded delicious and easy, so i decided to use it.

Bumbleberry Crumble.

3 cups mixed berries.
1/4 cup sugar.
2 Tbsp Cornstarch
1 cup flour.
1/2 cup butter.
1/2 cup brown sugar.
1/2 tsp cinnamon.
1/8 tsp nutmeg.

In large bowl, mix together white sugar, berries and cornstarch. Pour into greased 9 inch square dish.
in another bowl, combine flour, brown sugar and spices. stir until well blended. cut in butter until it resembles coarse oatmeal. Pour flour mixture over berry mixture.
Bake at 375 F for 35 to 45 minutes, or until starts to brown. serve warm topped with ice cream of whipped cream.

The nutmeg was something I decided to add to the recipe, just for a little kick. The recipe states you can use this topping for any kind of fruit crumble, peaces, apples, pears, but to adjust the amount of white sugar as per the sweetness of the fruit or berries used.

This is a great Autumn dessert...but wait...it's June...where is Summer? Blah. It has mostly been cool this Spring, it really does feel like Autumn! The temperature today is only 13 C (55 F) and overcast. Hopefully tomorrow will be nicer. I am heading to my parents soon for the night. My Dad bought my Nephew a fishing rod set for Easter, he learned that weekend how to cast with a small fishing rod, and this week Dad sent in a larger one for K to practise with. He seems like a natural fisherman, so Kyristan and Grampie are going fishing tomorrow morning! K is super excited, but since they will have to leave early in the morning, we are going up today to spend the night and help Nanny plant potatoes in the garden. If the temperature rises, tomorrow will be a great day in the country!

Hope everyone is having a good weekend!
