Mango Orange Chicken

Of the three recipes I have tried from the Kraft website this week, this one is by far the best. I had some for dinner last night and was counting the hours until lunch time today until I could have some more. Light and delicious, I can't wait to make it again.

Mango Orange Chicken

1+1/4 tsp. ground ginger.
1 tsp ground cinnamon.
4 small boneless skinless chicken breasts .
2 tsp oil.
2/3 cup whole wheat couscous, uncooked.
2 mangos, peeled, chopped.
1/4 cup Kraft Signature Mandarin Orange with Sesame Dressing.
2 Tbsp finely chopped red onions.
2 Tbsp chopped fresh cilantro.

In shallow bowl, mix cinnamon and ginger. Roll chicken in spices. In large skillet, heat oil, heat chicken in oil until cooked through. Meanwhile, prepare couscous as per package instructions; in a separate bowl, mix mango, onion and orange dressing.

When chicken is cooked, remove from pan and plate with couscous. Pour mango mixture into hot pan and cook for one minute until heated. Pour over chicken to serve.

I could not find couscous, and I prefer rice anyway, so that is what I used. I had some in these handy little cups, so it was convenient to take for my dinner last night.

My house smelled divine while the chicken cooked, the ginger and cinnamon combined to make a delicious coating. The remaining spices in the pan flavoured the mango just right.

The recipe makes enough for four, but I cut it in half, with the fresh fruit I wasn't sure if it would freeze well, and I am going away for the weekend so I will not be around to eat it. I had one more recipe to make this week, but I think I am going to wait until Monday for the same reason. I do not want leftovers sitting around in the fridge all weekend, just in case, because I hate wasting.

I hope everyone in the path of Hurricane Irene stays safe, she is headed here next, but they think it will be a tropical storm by the time it hits us Monday or Tuesday. Still something to contend with, but not as bad.

  3. Natasha, this sounds delicious. I bet it would be good with quinuoa, too. I don't think that's spelled right.

    It sounds like the storm petered out before it got to you, I hope!

  4. Thank you. Irene just buzzed past us last Sunday night as a Tropical Storm. A lot of people lost their hydro and there were some great waves and a bit of flooding, but not as much as on the US side of the border. I have a few pictures of the waves to post once I have time, and a recipe I made Monday! It has been a crazy week!
