S'more Cookies

From the moment i saw these cookies on Taking on Magazines one Recipe at a Time , I knew i had to have them! I even added marshmallows to my grocery list that day so i would have them to make this. I was right, they taste as good as they look. They are not that difficult to make, either. Yummy!

S'Mores Cookies.


1 + 1/2 cup flour.
1 cup graham crumbs.
1 tsp baking soda.
1/2 tsp salt.
1 cup butter.
3/4 cup sugar.
3/4 cup brown sugar.
1 tsp vanilla extract.
2 eggs.
1 cup chocolate chips.
1 + 1/2 cups marshmallows.

Cream sugars and butter. Add eggs and vanilla. Mix well. In separate bowl, mix crumbs, flour, soda and salt together. Add to sugar mixture, blending well. Add chocolate chips.
Drop teaspoonfuls onto prepared baking sheets. Bake at 375 F for 8 minutes, remove pans from oven and push a few mini marshmallows into each cookie. Return to oven for 2 to 3 minutes, or until fully cooked. Cool on racks.


The only change i made to the recipe was i used a dark chocolate bar instead of chips, only because i didn't realize i was out of chips and it is to late (and cold) to run to the store. I had bought 2 dark chocolate bars last week on sale for 1.99$, and have been trying to find a recipe for them. I thought this would be perfect, and i still have one left. It was nice to use my sharp knife i got at Christmas, it made light work of the chocolate. A far cry from when i was chopping chocolate for Truffles this time last year.


I found the batter a bit dense, i couldn't drop it, so i just rolled it into balls. I tried rolling a marshmallow into one cookie just to see how it would work; the cookie puffed quite a bit while cooking, otherwise it didn't make a difference, so i didn't bother doing it to the rest. I actually mixed these by hand, the first time in a long time! My mixer bowl is occupied in the refrigerator with pancake mix from last night.


This is my favorite picture, i shot it literally as i pulled them out of the oven. They looked so funny puffed up! I am sure i looked nutty standing there with an oven mitt on one hand and a camera in the other, but the picture had to be taken right away before they collapsed again.


This is an extremely delicious recipe, i urge you to try it. Soon. Better yet, now :-) They would make a great less messy campfire treat, or even treat for a pretend camping trip in the living room. Playing camp out might just take your mind of Winter!!

    Home made cookies, and make my own marshmallow to sandwich together whoopie style.

  8. Delish cookies, I have tried making something similiar...was a disaster. I ended up putting the batter in icecream.

    As far as grits go, you can find this near the oatmeal section in your grocery store. Cornmeal is different...as far as I know.

  13. These cookies look fantastic. I love the puffy marshmallows on top. They wouldn't last very long here as we all love s'mores;) ( sorry if 2 comments went thru.froze up while I was typing;)
