Porcupine Sauce

This recipe actually comes out of a double oops. I have been in the kitchen all day, making sweets to sell Sunday at the Flea Market and some meals for an order I was asked to make. The order is for a shepherd's pie, a lasagna and some chili. After making the first two, i realized i did not quite have enough hamburger for the third (oops #1), so i pulled another pound out of the freezer and decided to use what was leftover for dinner tonight. At about 4:15, i started an internet search and came across a recipe called Porcupine Meatballs. They looked great and I have all the ingredients, so I went with it.

Porcupine Meatballs.

1 Lb ground beef.
1/2 cup uncooked rice.
1/2 cup water.
1/2 cup chopped onion.
1/2 tsp salt.
1/2 tsp celery salt.
1/8 tsp garlic powder.
1/8 tsp pepper.
1 can tomato sauce.
1 cup water.

Combine meat, rice, 1/2 cup water, onion and spices in medium bowl. Roll into meatballs. Brown on all sides in hot frying pan. Drain. 

In square baking dish, combine tomato sauce and water. Add meatballs to sauce and stir to cover. Cover dish and bake at 350 F for 45 minutes. Remove cover and bake for an additional 15 minutes.


It was early this morning that oops #2 occurred, when i was washing out a condensed milk can after making fudge, i managed to slice my finger. Having a bandage on my finger, i have been using gloves all day to do dishes. But i do not have any plastic gloves for making meatballs. So, i washed out my cookie scoop and used it.  Of course, as soon as the meatballs hit the pan, they fell apart because they were not tightly packed, thus the Porcupine sauce instead of meatballs. I also added a sprinkle of Italian spice to the baking dish before I added the meat, just because the plain tomato sauce looked, well...to plain. 


I was planning on having it with bow-tie pasta, but when I was going through my breadbox that i keep pasta in, i found some leftover egg noodles and decided to use them instead. After pouring the sauce on top, i gave it some cheese, because everything is better with cheese! 

This is a very delicious meal, not very heavy. I can't wait to try it again as proper meatballs. There are plenty of leftovers as well, to go into the freezer for lunches. 

Here's something else i made today, candy kabobs! I only made 6, mostly because I have nothing to package them in. I put them all in a medium freezer bag and tied the bottom, hopefully they will stay fresh until Sunday and some spoiled kid will come along and say "Mommy! I want that!!" :-) 


They were super easy to make, i recommend spraying the sticks with cooking spray first. I tried making one last week and it proved quite difficult to put the candies on the sticks. I read online to spray them, so i did this time then wiped them with paper towel. While it was still a little difficult in the places i missed, it made it quite easier for the most part. 

So i hope everyone has had a great week so far, mine has been busy and the weekend is looking to be the same. Still looking for a job, but i can not seem to find much that i am qualified for or pays more than minimum wage, which is 9.50 an hour right now. I am keeping my fingers crossed and my eyes peeled, though!! Have a good weekend!

  3. Oh, wow, it will be 2 weeks Monday and the lady said it should have been there by the next Tuesday, depending on customs, so essentially 3 days ago. I will go to the Post Office Monday and see if it can be tracked.

It absolutely made my entire weekend, thank you SO much for sending that adorable and awesome box of goodies to me. I can't wait to try the syrup. I told Brad that I was taking it to the next breakfast restaurant I go to :-)

  5. The meatballs look good! I've heard of them and will have to try them after seeing this. Your candy kabobs are so clever and I bet they would attract every kid in the neighborhood really fast! Way to go!

  7. Thank you! I only sold 1 kabob, but i think because i did not have them prominently displayed. I am thinking of going back next week!
