'Bakers Best' Chocolate Chip Cookies.

I've been in the kitchen all day working on an order for someone, it was a fair sized one of 4 different meals. I was able to use my crock-pots for two of them, so it made the effort a breeze. After cooking all day, i got some good news; i have been given the opportunity to move to a bigger apartment with a much larger kitchen, for a minimal rent increase. It is just down the street, so i do not need an abundance of boxes, and I can't wait. The move-in completion is set for Sunday, yes 6 days from now, so i will be running up and down the street all week, and the guys will be taking the furniture Saturday. Just a heads up that you will probably not be hearing from me until i get settled next week. I decided my kitchen is going to be the first to go, since it has the most stuff in it, so i decided to make a last batch of cookies. Sustenance for the week ahead :-)

I found this recipe in the Spring 2011 Kraft What's Cooking magazine. I changed my address on their website first thing, so i do not miss out on the Summer one that should be in soon :-) They made them with mini eggs stuck on top for Easter. I don't have any leftover, so i just made them as plain chocolate chip.



'Bakers Best' Chocolate Chip Cookies.


1 cup butter, softened.
1 cup packed brown sugar.
1/2 cup white sugar.
2 eggs.
2 tsp vanilla.
2 + 1/4 cups flour.
1 tsp baking soda.
1 pkg (300g) semi sweet chocolate chips (Baker's brand).

Heat oven to 375 F. Beat butter, sugars, eggs, and vanilla in large bowl with mixer until light and fluffy.Add flour and baking soda; mix well. Stir in chocolate chips.
Drop teaspoonfuls 2 inches apart onto prepared baking sheets. Bake 10 to 12 minutes or until lightly browned. Cool on sheet 3 minutes before removing to wire racks to cool completely.


These were deliciously easy and quick, the recipe states it makes 42, i got 36. Close enough. I had them mixed and all cooked within 30 minutes, so it is a good last minute recipe you can use when you kid calls to say they are bringing home a half dozen friends!


I forgot to take a picture of the batter, so this is what was left after scooping four pans. This bit made 4 cookies with my scoop. These cookies taste great, the magazine suggests letting kids help; i think this is a great recipe and the next time I have K over, we are making cookies!
