Tomato Soup Cake

My sister's wedding day is almost here, just two more days!! Tomorrow is the rehearsal dinner, and they decided to have a Pot-Luck. They wanted each person to bring one dish, but i figured on bringing three. My theroy is the more i make, the less the bride has to. So, i am making three dishes that our Mom made often when we were children. Potato Scallop, homemade rolls and tomato soup cake.

A lot of people think ew when they hear tomato soup cake, but once they try it, they fall in love! It is reminiscent of a carrot cake, most people say. I don't know where my Mom got the recipe, but it was probably in an old cookbook from the 70's, she has lots!

Tomato Soup Cake


1 cup white sugar
1/2 cup butter or margarine.
1 cup tomato soup (i use a full 10 oz can, as it is about 1 +1/8 cup)
2 tsp cinnamon.
1 tsp baking soda.
1/2 tsp ground cloves.
1 + 1/2 cups flour.
1 cup raisins (optional)
1/2 cup walnuts (optional)

Cream butter and sugar. Add soup, mix well (mix will look curdled). In separate bowl, mix flour, soda, cloves and raisins. Blend into soup mixture. Stir in walnuts.
Pour into 8 X 8 inch greased pan. Bake for 35 to 40 minutes at 350 F.
Cool completely before icing.



There are 16 people in the wedding party, plus two kids and four parents, therefore i doubled the recipe. I didn't actually double it properly, i just made it twice and stuck it in a bigger pan. If you look closely at the picture above, you can see swirls of color. The first batch  made i used a can of soup in the cupboard. The second, i had ran out to the store earlier and picked up. All they carried was the low calorie version, this one made a lighter batter.


I didn't bother adding the raisins, since i only had about a half cup, and i omitted the walnuts as well, since i had none. I let it cool over night and this morning iced it with a store bought can of cream cheese icing. I can't make icing very well, so i usually buy it.


I gave it a light sprinkle of hearts, left over from Valentine's Day, and i am going to slice it when i get to the party. It will be easier to transport across town full rather than sliced. I didn't saturate it with the hearts because my nephew can't eat the red ones, and i am sure he will not have the patience to sit there while someone picks them off!

So, two days and lots to do! I am making the rolls this morning and then running the roads this afternoon getting stuff done for my sister, as well as all day tomorrow, so i probably won't be back until Friday.

  1. O my gosh this sounds so cool, I have never (knowingly) had tomato soup cake but it sounds great! Congrats to your sister, I imagine she loves you a lot for making three dishes!!!

  2. Weddings are so exciting (and a bit of work). I'm sure she appreciates all of your help, especially in the food department. I remember years ago, someone had brought a tomato soup cake to a work potluck and I remember it tasting really good but I never got the recipe. Well, now I do! Thanks for sharing this!! :)

  6. Tomato soup cake rocks! Our mom's are probably the same age coming up with recipes like that. Definately try it with cream cheese icing. Yummers!
