Cheese and Raisin Biscuits

It has been raining, or overcast, or misty, or just plain miserable for about 95% of the last two weeks. I think we have had one sunny day this month. One sunny day. Out of 16. They are calling for more rain tomorrow, and maybe sun on Wednesday through Friday, then more rain.

Because it is so miserable, I made chicken noodle soup tonight. A nice, warm meal on a wet day. I also decided to make biscuits tonight to, just i wanted to jazz them up a bit; so i split the recipe in half and added cheese to some, and raisins to the other. The soup turned out really good, it is basically a throw together soup. I used premade broth, added a chopped potato, carrot and sweet potato. some frozen peas, dried bowtie pasta and a chopped precooked chicken breast.


Tea Biscuits


2 cups flour

4 tsp baking powder
3 tsp sugar
1 tsp salt
4 Tbsp shortening
1 cup milk

Sift dry ingredients together. Cut in shortening. Add milk and mix well. Turn onto floured board, knead a little and roll out. Cut into 24 biscuits. Bake at 400 F for 15 to 20 minutes.


Both types turned out very well, but the cheese stuck a bit to the pan; nothing bad, but you may want to grease the pan a bit.  This recipe is one that both my Mom and I have been using for years and years. They turn out light and fluffy every time.It is a perfect beginner recipe. When I was a kid, i would eat a half dozen of them in a sitting! They are best warm from the oven. 


Hopefully this raining spell passes by soon, thankfully there has not been much flooding. March was a warmer month, so the snow melted before the April rain started. Unfortunately, Mother Nature seems to have forgotten April is over and it is now supposed to be sunny May. 

On a brighter note, the Saint John Seadogs WON the President's Cup challenge!!! YAYAY!! It almost went to seven games, the last being tonight, but with 30 seconds left of the final period the Seadogs tied the score. It took one and a half overtime periods to get another goal; and now on Friday, the Seadogs are going to the Memorial Cup, which is played by Junior Hockey teams from across Canada, and a few of the most Northern States. Last year, the Seadogs made it to the Presidents Cup Finals, along with another New Brunswick team, the Moncton Wildcats. It was the night of the first game in that round that I started this Blog. Now, a year later, the Seadogs have taken the championship! Tomorrow night is a send off party for them, it is a free event and an autograph session; best to get their sigs now, they may be drafted to the NHL soon! So, I may be attending that tomorrow night, maybe the rain will go away for a bit so they can have a BBQ to.
