So on Monday, I went to the hockey game. Final game in the Semi- Finals of the Quebec Major Junior Hockey League. It was the potential deciding game, since it was best of 7 and the score was 3 - 2. Saint John creamed Victoriaville with a 7 to 1 score, and took the semi final round.
So, silly me, decided to hum and haw about getting tickets for round 1 of the finals...Saint John Seadogs VS Moncton Wildcats. Both New Brunswick teams, so it was sure to be a great competition. Who is going to bring home the cup to New Brunswick? And because I thought i had plenty of time...after all, tickets went on sale Wednesday, the game was not till Friday...i missed out. Tickets sold out in 2 hours.
Anyway...here i am stuck at home while 1/2 the city is out watching the hockey game. That is not on television. And the only radio station that plays it, seems to only want to tune in on my alarm clock, in my kitchen....hmmmm. Maybe bake while listening?
So...the bake-a-thon is on. how many sweet breads can we make in three periods of hockey?
Well...three (and the game is not over yet, i turned it off 10 minutes into the 3rd because my team is getting trounced).
#1 : Lemon Bread....seems to be everyone else's favorite. I usually use butter or margarine, but was not paying attention (as while i was starting, so was the game, Moncton got a goal 14 seconds into the game, and Saint John retaliated less than a minute later...had a few other things on my mind) so it did not turn out as aesthetically pleasing as it usually does.
#2 Banana bread...i got done these 2 just as the 1st period ended (M-2, SJ-1) and realized that was it for eggs, so i ran down the hill to the store. I threw them in together and they came out within 5 minutes of each other.
#3: Cherry Bread...my favorite, and now the game is over, i just heard my team lost 5-1, booo. and i have red fingers from chopping cherries.
The next game is in Moncton on Sunday, i have no way to get there (and it is sold out)...so how many cookies come out of three periods? Hmmmm.

RECIPES

LEMON BREAD
1 cup sugar
6 Tbsp melted butter (or room temp margarine)
2 beaten eggs
1/2 cup milk
1 + 1/2 cup flour
2 tsp baking powder
1/2 tsp salt (optional)
grated rind of 1 lemon
Put in greased pan and let rise for 20 minutes. Bake at 350 F for 45 minutes. Mix juice of 1/2 lemon with 3 Tbsp sugar and spread over top when removing from oven.
Notes:
~ i use less sugar (usually 3 tsps) and usually the whole lemon, unless i am making 2.
~ i do not usually use salt in my baking, which is why i say optional.

BANANA BREAD
1/4 cup shortening
1 cup brown sugar
1 egg
4 large bananas, mashed
1 + 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt (optional)
Cream shortening and sugar, add well beaten egg. Add sifted dry ingredients, pour into prepared pan. Bake 45 minutes at 350 F, or until toothpick comes out clean.
Notes:
~Prepared pan usually means line it with wax paper (makes cleanup easy)
~ i usually only use 3 bananas.

CHERRY BREAD
1 cup brown sugar
2 Tbsp butter
1 egg, beaten
2 cups flour
2 tsp baking powder
1/2 tsp salt (optional)
1 small bottle cherries, chopped up
1/2 cup walnuts (optional)
1 cup cherry juice + milk
Cream butter and sugar, add beaten egg and cherries. Put cherry juice in cup and fill to one cup with milk. Add dry and liquid ingredients alternately. Add walnuts, mix well. Put in prepared pan and let stand 20 minutes. Bake at 350 F for 45 minutes or until toothpick inserted in center comes out clean.
Notes:
~ I usually do not let it sit 20 minutes.
~ I seldom use walnuts, they cost to much.
